1) Recipe: Chicken Tikka
Tikka means bits in Hindi, so it's no surprise that chicken tikka is made from small pieces of chicken marinated in yogurt and spices. Just toss together a simple Indian-inspired mixture of yogurt, ginger, garlic, masala, cayenne pepper, black pepper and salt. Toss it with chunks of boneless skinless chicken breasts (the size is up to you) for about an hour until fully marinated. Then toss your chicken on a hot grill for 10 to 15 minutes per side; until cooked through but not dry or burnt. Toss on a few slices of onion if you like—onions just add a bit more flavor—and call it dinner!
2) Recipe: Fish
Mix a cup of gram flour, half a cup of (chickpea flour), half a cup of all-purpose flour, 1 tbsp. of coriander powder, 1 tsp. of turmeric powder, half a tsp. each of baking soda and salt, 2 tbsp. olive oil and one cup water in a bowl to make batter. Add 3 slices chopped fish (or paneer) and mix to coat it with batter well.
3) Recipe: Chili
This is one of India’s most beloved street foods, featuring paneer cheese in a mildly spiced stew. It’s quick to make, making it perfect for weeknight dinners. Plus, it tastes best when served hot off the stovetop! For an extra flavor kick, add a squeeze of lime juice at serving time. Serve with rice or on its own. And you can change up your paneer cheese to create different kinds of curries (mutton curry in Punjabi style). Simply substitute any combination of nuts, meat or vegetables that you desire—or leave out altogether for a vegetarian meal.
4) Recipe: Kati Roll
The Kati Roll is a popular Indian dish that has now become an American favorite. Kati Rolls are usually filled with meat, chicken, or veggies wrapped in naan bread. This recipe is a fun way to re-create them at home! To start making your own Kati Rolls you will need: *Naan Bread (1 per person) *One egg white for each person *Meat of choice such as steak, tofu, chicken breast or even shrimp (about 3 oz per person) *2 cups fresh spinach leaves *Salt to taste There’s no exact measurements on anything here so just make sure you keep everything about equal. On one piece of naan bread you can place a little meat followed by some spinach then add another piece of naan bread on top.
5) Recipe: Ice Cream Sandwich
I love jamun - those delicious little balls of fried dough soaked in sugar syrup. So naturally, I had to see if they would work in an ice cream sandwich. And they did! In fact, with chocolate cookies, it’s a bit reminiscent of a dunk.aroos ice cream sandwich. Gu.lab Ice Cream Sandwich Recipe Ingredients: • 1/2 cup chopped gula.b • 1/2 teaspoon rose water • 2 cups vanilla ice cream Instructions: 1. Place chopped gula.b jamu.ns into a plastic bag and microwave for 30 seconds. Open bag carefully as steam will be released. Add rose water to melted and mix well to form soft dough balls again. 2.
6) Recipe: Chole Bha.ture
Even though it’s served out of a tiny cart, chole bha.ture is to North India what burgers are to American culture. The dish consists of a fried (flatbread) topped with a chickpeas-and-spices-based stew called chole (pronounce). It’s accompanied by crispy and slightly spicy boiled potatoes drizzled with yogurt—for some extra sweetness. Chole is usually eaten at roadside carts all across north India, but you can make your own versions at home for about $6 per serving. To stay healthy, skip the deep fryer—use your oven instead!
7) Recipe: Samosa
Cauliflower 65 is a spicy Indian side dish. Fried cauliflower florets tossed in spices, coconut, tamarind and chili peppers. This recipe does not require you to deep fry cauliflower, so it’s healthier than most versions you’ll find at restaurants. The preparation is simple with few ingredients required. To make Cauliflower 65, you need: 1 head of cauliflower, 1 cup shredded coconut (unsweetened), 2 tbsp tamarind sauce (can be replaced with lime juice), 2-3 green chilies chopped fine, salt to taste and oil for frying/cooking. This authentic Indian street food can be served as a snack or a side dish with lunch or dinner.
8) Recipe Cauliflower 65
Cauliflower 65 is a spicy Indian snack that’s deep-fried, breaded in chickpeas, and then tossed in a sweet-spicy sauce. The deep-frying can make it not so healthy or delicious. But if you swap out cauliflower for potatoes, use olive oil instead of ghee or butter, opt for whole wheat flour rather than refined white flour (like maida), you’ll have a deep-fried snack that’s still pretty nutritious (not to mention less fattening). Simply bake it using these tips: spray an oven tray with nonstick cooking spray; drizzle 2 tablespoons olive oil over each piece of cauliflower; season well with salt; bake at 200°C/400°F until golden brown.
